An Oatmeal Hack That Will Transform Your Breakfast Game

Silky, nutty and naturally sweet, this is the BEST DAMN OATMEAL you'll ever eat. It takes a couple of simple additional steps, some warm spices and a willingness to transform your breakfast routine.

I'm going to get straight to the point here: This is the best damn oatmeal you'll ever eat. It's your oatmeal, the oatmeal you're already making — except with a couple of extra steps that take it next level. 

It might not look like much, but that's the point. It's that simple. It's silky and nutty and makes the house smell of warm spices. Also, it's so naturally sweet that you don't need to add any extra sweetener. (But you can absolutely add some if you'd like). This is oatmeal that will actually get you excited to get out of bed in the morning.

The hack: toasting the oatmeal in butter and then soaking the oats before cooking. That's it! That's it. That's what you've been missing all your life.

COOKING NOTES

When your house starts smelling of oatmeal cookies, that's when you know your oats are perfectly toasty. You can make a single serving of this recipe or make a big batch for the whole week. (I usually do the latter.)

MAKES 2 SERVINGS

PREP TIME: 5 minutes COOK TIME: 15 minutes TOTAL TIME: 20 minutes (plus soaking time)

INGREDIENTS

2 tablespoons butter (or ghee or coconut oil)
1 cup rolled oats
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
A pinch of salt
2 cups milk 

INSTRUCTIONS

  1. In a medium saucepan over medium-low heat, melt the butter. Add the oats and cook until lightly toasted and fragrant, 2 to 3 minutes.

  2. Add the cinnamon, cardamom, and salt and cook until fragrant, 1 minute.

  3. Turn off the heat, add the milk and stir to combine. Let cool, then cover and transfer to the refrigerator to soak overnight.

  4. The next morning, cook the oats until soft and most of the liquid is absorbed 6 to 8 minutes. Serve as is or with favorite toppings.
